We believe the best honey comes from a deep relationship with one place. Our single apiary in the Mohawk Valley produces honey that could exist nowhere else. It's a pure expression of this landscape, these seasons, these bees.

In central New York's Mohawk Valley, our apiary experiences true seasonality. Winter temperatures regularly drop below zero. Spring arrives late but urgent. Summer can bring both abundance and drought. Fall's first frost can come as early as October. The honey holds all of it.

Our approach is defined by restraint. We don't move our hives to chase blooms. We don't blend harvests to achieve consistency. We don't heat our honey to prevent crystallization. What we do is listen—to the bees, to the seasons, to the subtle signals that indicate when honey has reached its peak. Everything else follows from this attention.

We keep one apiary in one valley. We harvest what each season provides. When it's gone, we wait for the next. This is how we've always worked. It's the only way we know.
