Pulled from our hives on a single July day, this honey holds an entire season. From early spring's first blooms through summer's peak, our bees gathered what the Mohawk Valley offered. Straight from the hive in its purest form this honey is 100% raw, unfiltered, and unheated.

This harvest is light and luminous with layered floral notes.

Raw honey keeps its beneficial enzymes intact and preserves complex flavors. We maintain temperatures below what bees keep in the hive. Commercial producers heat to 150°F or higher for faster processing, losing these natural compounds.

Filtering removes pollen—nature's nutritional bonus. Our honey keeps every grain, along with propolis and beeswax particles from the comb. Commercial producers ultra-filter to prevent crystallization and create uniform appearance.

Unheated honey remains a living food. It may crystallize naturally, proof of its raw state. Simply place the jar in warm water to reliquefy. Commercial pasteurization at 161°F prevents crystallization permanently, along with everything else that makes honey more than just sweetener.
